Classic Crudités

Crudités are cut vegetables; choose your favorites and dress them with a quick lemon vinaigrette.

Serves: serves 4


  • 6-10 radishes, washed
  • 2 carrots, peeled
  • 4-6 young beets, washed
  • 2-3 sticks celery, washed
  • juice of half a lemon
  • 1 tbsp olive oil
  • 1 tbsp chopped fresh parsley

  1. Classic cut vegetables for crudités are fresh radishes with their green tops; raw carrots, peeled and grated; grated raw young beets; and chunks of crisp celery.
  2. Serve with a lemon and olive oil dressing, with a sprinkling of fresh parsley on top.
