Crudités are cut vegetables; choose your favorites and dress them with a quick lemon vinaigrette.
Serves: serves 4
- 6-10 radishes, washed
- 2 carrots, peeled
- 4-6 young beets, washed
- 2-3 sticks celery, washed
- juice of half a lemon
- 1 tbsp olive oil
- 1 tbsp chopped fresh parsley
- Classic cut vegetables for crudités are fresh radishes with their green tops; raw carrots, peeled and grated; grated raw young beets; and chunks of crisp celery.
- Serve with a lemon and olive oil dressing, with a sprinkling of fresh parsley on top.
