Chickpeas in Olive Oil and Lemon

This tasty starter is a cinch to make and low in fat.

Serves: Serves 4
Ingredients:
- 3 tbsp olive oil
- 2 garlic cloves, finely sliced
- 1 × 14oz (400g) can chickpeas, drained and rinsed
- juice of 1/2 lemon
- zest of 1 lemon
- handful of fresh flat-leaf parsley, chopped
- sea salt and freshly ground black pepper
- extra virgin olive oil or hot chili oil
Directions:
- Heat the oil in a frying pan, add the garlic and chickpeas, and cook for 2 minutes. Stir in the lemon juice, zest, and parsley, then cook over medium heat for and additional 2 minutes.
- Remove from the heat and season well with salt and pepper. Serve hot or cold with a generous splash of extra virgin olive oil or chili oil.
Tips:
- Use dried chickpeas if time permits. Soak them the night before, then drain and simmer for 1-11/2 hours, until soft.
