Chickpeas in Olive Oil and Lemon

  • 3 tbsp olive oil
  • 2 garlic cloves, finely sliced
  • 1 × 14oz (400g) can chickpeas, drained and rinsed
  • juice of 1/2 lemon
  • zest of 1 lemon
  • handful of fresh flat-leaf parsley, chopped
  • sea salt and freshly ground black pepper
  • extra virgin olive oil or hot chili oil

  1. Heat the oil in a frying pan, add the garlic and chickpeas, and cook for 2 minutes. Stir in the lemon juice, zest, and parsley, then cook over medium heat for and additional 2 minutes.
  2. Remove from the heat and season well with salt and pepper. Serve hot or cold with a generous splash of extra virgin olive oil or chili oil.
  • Use dried chickpeas if time permits. Soak them the night before, then drain and simmer for 1-11/2 hours, until soft.
