Curried Devilled Eggs

Spice up and old stand-by-- deviled eggs-- with a little curry.

Serves: Serves 4
Ingredients:
- 6 large eggs
- 2 tbsp mayonnaise
- 1-2 tsp medium-hot curry powder
- 1/4-1/2 tsp cayenne pepper, to taste
- sea salt and freshly ground black pepper
Directions:
- Cook the eggs in a pan of boiling water for about 6 minutes for hard-boiled. Remove from the pan and let cool, then peel away the shell.
- Halve the eggs lengthwise, and carefully remove the yolk using a teaspoon. Put the egg yolks in a bowl, and mix together with the mayonnaise, curry powder, and cayenne. Season well with salt and pepper.
- Now spoon the devilled egg mixture back into each egg white, dividing the mixture evenly among the halves.
- Serve with some crispy lettuce leaves, Parma ham, and another pinch of cayenne pepper, if you wish.
Tips:
- Cheat...This recipe IS a cheat-it's an emergency last-minute starter!
- Do not overcook the eggs, otherwise the outside of the yolks will be gray instead of yellow, resulting in a less attractive finished dish.
