Peanut Butter and More Fajitas

Try this fajita treat for a snack or as part of a quick meal.

Serves: 1 serving

Ingredients:

  • 2 tablespoons Peanut butter
  • 2 tablespoons applesauce or other filling (chopped apples, shredded carrots, shredded zucchini, mashed banana, fruit spread)
  • 1 8-inch tortilla
  • Shredded lettuce, optional

Directions:

  1. Combine peanut butter with applesauce or other filling of choice. Place filling in tortilla. Add lettuce, if desired.
  2. Roll up tortilla. Eat immediately.
