Sweet Balsamic Onions

Sweet onions go great with balsamic vinegar.

  • 3 tbsp olive oil
  • 1lb (450g) whole baby onions, peeled
  • 3 garlic cloves, finely sliced
  • 3 tbsp balsamic vinegar
  • sea salt and freshly ground black pepper
  • olive oil or hot chili oil, to serve

  1. Preheat the oven to 350°F (180°C). Heat the oil in a deep-sided frying pan, then add the onions, and cook over low heat, stirring frequently, until browned, about 15 minutes.
  2. Transfer the onions to a small baking dish, packing them in tightly. Sprinkle with the garlic, and spoon the balsamic vinegar over the top. Season well with salt and pepper, then bake, stirring every 5 minutes, until tender and glazed, about 20 minutes. Serve hot or cold with a good drizzle of olive oil or chili oil, and some crusty bread and cheese.
  • Sprinkle in some fresh thyme leaves, and finely chopped rosemary instead of the garlic.
  • The onions can be prepared well in advance and will keep under oil for weeks in the refrigerator.
