Double Apricot Smoothie

This is a refreshing treat for the apricot lovers in your house.

Serves: 2 (15-ounce) servings

Ingredients:

  • 1 cup chilled apricot nectar
  • 1/2 cup 2 percent milk
  • 1 1/2 cups sliced apricots
  • 10 dried apricot halves, unsulfured if possible
  • 3/4 cup vanilla frozen yogurt

Directions:

  1. Combine apricot nectar, milk, apricot slices, and dried apricots in a blender. Blend on high speed until fruit is pured and mixture is smooth.
  2. Add frozen yogurt and blend on high speed again until smooth. Serve immediately.
Tips:
  • This can become a Double Peach Smoothie if you substitute peach nectar, peach slices, and 4 dried peaches.
