Creamy Scrambled Eggs with Franks
This unusual skillet dish is sure to win cheers from hot dog lovers. Maybe you've never thought of healthy franks as a breakfast meat, but they provide good taste and protein in this flavorful combo.
Serves: Serves: 4 (3/4 cup)
Ingredients:
- 8 ounces Healthy Choice 97% fat-free frankfurters, diced
- 6 eggs or equivalent in egg substitute
- 1 teaspoon lemon pepper 1 teaspoon dried parsley flakes
- 1/4 cup Land O Lakes no-fat sour cream
Directions:
- In a large skillet sprayed with butter-flavored cooking spray, sauté frankfurters for 3 to 4 minutes. Lower heat.
- In a medium bowl, combine eggs, lemon pepper, and parsley flakes.
- Pour egg mixture into skillet. Add sour cream. Mix well to combine.
- Continue cooking until eggs are set, stirring occasionally.
