Polenta Porridge
Polenta porridge is a healthy and filling breakfast.
Serves: 4 servings
Ingredients:
- 2 1/2 cups water
- 2 1/2 cups skim or low-fat milk
- 1 cup polenta, coarsely ground cornmeal, or yellow corn grits
- 1/2 cup golden raisins
Directions:
- Place the water and milk in a 3-quart pot. Stir in the polenta, cornmeal, or grits, and bring to a boil over medium heat, stirring frequently.
- Reduce the heat to low, cover, and simmer, stirring every few minutes, for about 15 minutes, or until the mixture is thick and creamy. Add the raisins during the last few minutes of cooking.
- Serve hot, topped with honey or maple syrup, if desired.
