Scrambled Egg Hash

Here's a diner-type breakfast dish that combines your family's favorites: potatoes, eggs, and ham.

Serves: Serves: 4 (1 cup)

Ingredients:

  • 3 cups (10 ounces) shredded loose packed frozen potatoes, thawed
  • 1 full cup (6 ounces) diced Dubuque 97% fat-free ham or any extra-lean ham
  • 6 eggs, beaten, or equivalent in egg substitute
  • 1/4 teaspoon lemon pepper
  • 1/4 cup Land O Lakes no- fat sour cream

Directions:

  1. In large skillet sprayed with butter-flavored cooking spray, brown potatoes and ham for about 10 minutes, stirring occasionally.
  2. Add eggs and lemon pepper. Mix well to combine. Stir in sour cream.
  3. Lower heat and continue cooking until eggs are set, stirring occasionally.
Tips:
  • Mr. Dell's frozen shredded potatoes are a good choice or raw shredded potatoes may be used in place of frozen potatoes.
