Scrambled Egg Hash
Here's a diner-type breakfast dish that combines your family's favorites: potatoes, eggs, and ham.
Serves: Serves: 4 (1 cup)
Ingredients:
- 3 cups (10 ounces) shredded loose packed frozen potatoes, thawed
- 1 full cup (6 ounces) diced Dubuque 97% fat-free ham or any extra-lean ham
- 6 eggs, beaten, or equivalent in egg substitute
- 1/4 teaspoon lemon pepper
- 1/4 cup Land O Lakes no- fat sour cream
Directions:
- In large skillet sprayed with butter-flavored cooking spray, brown potatoes and ham for about 10 minutes, stirring occasionally.
- Add eggs and lemon pepper. Mix well to combine. Stir in sour cream.
- Lower heat and continue cooking until eggs are set, stirring occasionally.
- Mr. Dell's frozen shredded potatoes are a good choice or raw shredded potatoes may be used in place of frozen potatoes.
