Pineapple-Curry Relish

This is an all-purpose relish that goes with almost anything.

Serves: Makes about 2 cups


  • 11/2 cups small-diced fresh pineapple
  • Juice of 2 limes (about 1/4 cup)
  • 2 tablespoons roughly chopped scallions, green and white parts
  • 1 tablespoon minced fresh chile pepper of your choice
  • 1 tablespoon peeled and minced fresh ginger
  • 1 tablespoon curry powder

  1. Combine all the ingredients in a medium bowl and mix well. This relish will keep, covered and refrigerated, for 3-4 days.
