Banana Bread

Serves: makes 8 servings
Ingredients:
- 1 3/4 cups all-purpose flour
- 1 1/2 tsp baking powder
- 6 tbsp butter, plus more for the pan
- 2/3 cup packed light brown sugar
- 3 ripe bananas
- 1/2 cup plain low-fat yogurt
- 2 large eggs
- 3/4 cup walnuts, chopped
Directions:
- Preheat the oven to 350°F (180°C). Butter the loaf pan and line the bottom with wax paper. Sift the flour and baking powder together into a bowl. Add the butter and use your fingertips to rub it in until the mixture resembles bread crumbs. Stir in the sugar.
- Mash the bananas with a fork-you should have 1 cup. Add the bananas, yogurt, and eggs to the flour mixture and stir until combined. Stir in the walnuts. Spread in the pan.
- Bake for 11/4 hours, or until a wooden toothpick inserted in the center comes out clean. Transfer to a wire cake rack and let cool 5 minutes. Invert onto the rack, remove the paper, and cool completely.
Tips:
- Prepare ahead: Will keep for up to 1 week in an airtight container.
