Chocolate Truffles

Homemade truffles taste decedent, but are so simple to make.

Serves: Makes 12-14
Ingredients:
- 41/2oz (125g) good-quality semi-sweet chocolate, plus scant 1oz (25g), finely grated
- drizzle of Baileys® Irish Cream liqueur or brandy
- 1/4 cup shelled and skinned Brazil nuts, finely chopped
- 1/4 cup dried cherries, chopped
Directions:
- Break the chocolate into small pieces and place in a microwave-safe bowl. Microwave on Medium for 1-2 minutes or until just melted, then stir until smooth. Stir in the liqueur to blend, then stir in the nuts and cherries.
- Leave to cool for 30 minutes, then scoop up a generous teaspoonful and form into a ball. Roll in the grated chocolate to coat, then place in a parchment-lined pan. Repeat with the remaining chocolate mixture. Refrigerate the truffles for 30 minutes or until set. Serve as a sweet treat with coffee or espresso.
Tips:
- Roll the chocolates in finely chopped toasted almonds or grated white chocolate instead.
