Cinnamon Bread Pudding

Don't save this cinnamon bread pudding just for special occasions. It's easy to make, and so great tasting!

  • 2 cups day-old bread cubes
  • 1/2 cup egg substitute
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 3/4 cups evaporated skim milk
  • 1/2 cup boiling water
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup golden raisins
  • 2 teaspoons vanilla extract

  1. Preheat oven to 350F. Spray 1 1/2-quart baking dish with cooking spray.
  2. Place bread cubes in dish.
  3. Combine egg substitute, sugars and evaporated skim milk in a medium bowl; mix well.
  4. Add boiling water, cinnamon, nutmeg, raisins and vanilla extract; mix until all ingredients are blended.
  5. Pour mixture over bread cubes. Bake 40 to 45 minutes.
  6. Bread pudding can be covered and refrigerated until ready to serve. Serve warm (heat in oven or microwave) or cold.
  • According to USDA research, cinnamon helps to control blood sugar levels. Ground cinnamon stimulates the production of glucose-burning enzymes and boosts insulin's effectiveness.
