Cinnamon Bread Pudding
Don't save this cinnamon bread pudding just for special occasions. It's easy to make, and so great tasting!
Serves: Serves: 4
Ingredients:
- 2 cups day-old bread cubes
- 1/2 cup egg substitute
- 1/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 1 3/4 cups evaporated skim milk
- 1/2 cup boiling water
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup golden raisins
- 2 teaspoons vanilla extract
Directions:
- Preheat oven to 350F. Spray 1 1/2-quart baking dish with cooking spray.
- Place bread cubes in dish.
- Combine egg substitute, sugars and evaporated skim milk in a medium bowl; mix well.
- Add boiling water, cinnamon, nutmeg, raisins and vanilla extract; mix until all ingredients are blended.
- Pour mixture over bread cubes. Bake 40 to 45 minutes.
- Bread pudding can be covered and refrigerated until ready to serve. Serve warm (heat in oven or microwave) or cold.
Tips:
- According to USDA research, cinnamon helps to control blood sugar levels. Ground cinnamon stimulates the production of glucose-burning enzymes and boosts insulin's effectiveness.
