Gumdrop Bread

This fun, colorful bread will have your kids marveling.

12 servings

Ingredients:

  • 3/4 cup tiny gumdrops
  • 3 cups flour
  • 3/4 cup sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup walnut pieces, optional
  • 1 egg
  • 1/3 cup vegetable oil
  • 11/3 cups low-fat milk
  • 1/2 teaspoon vanilla extract
  • Vegetable oil cooking spray

Directions:

  1. Preheat oven to 350°.
  2. Place gumdrops, flour, sugar, baking powder, salt, and walnut pieces, if desired, in large mixing bowl.
  3. Beat egg just until the white and yolk are mixed.
  4. Add egg, oil, milk, and vanilla to dry mixture. Stir until dry ingredients are just wet. The mixture will be lumpy. DO NOT OVERMIX.
  5. Spray loaf pan with vegetable oil cooking spray. Pour batter into pan.
  6. Bake 60-65 minutes or until golden brown.
