Strawberry and Raspberry Granita

Whip up a batch of this strawberry and raspberry granita for a quick and healthy dessert.

Serves: Serves 6
Ingredients:
- 1 cup confectioners' (powdered) sugar
- 1 tbsp fresh lemon juice
- 11/2 cups fresh or frozen unsweetened raspberries
- 11/2 cups fresh strawberries, hulled, or frozen unsweetened strawberries
Directions:
- In a food processor, combine the confectioners' sugar, lemon juice, and 2/3 cup boiling water. Pulse until the sugar dissolves. Add the raspberries and strawberries, and purée.
- Transfer the mixture to a shallow freezer-safe plastic container, cover, and freeze for 2 hours. Remove from the freezer and scrape the surface with a fork, breaking the ice into small pieces until slushy. Freeze for another 2 hours and then repeat the process every 2 hours-once or twice more-until the mixture is completely broken into tiny snow-like ice particles. Leave in the freezer until ready to serve. Although granita is best served the same day it is made, it will keep for up to 1 month in the freezer. Serve frozen scoops plain, or with a dollop of whipped cream.
