Bacon and Swiss Tortilla Melt

This combination is a bit unconventional, but it's delicious and ready in minutes.

Serves: Serves 4

Ingredients:

  • 6 pieces bacon
  • 2 large soft flour tortillas
  • 1 (8-oz.) pkg. shredded Swiss cheese

Directions:

  1. Preheat the broiler.
  2. Heat a large skillet over medium heat, and cook bacon until crispy, about five minutes, turning once. Remove bacon strips to a paper plate covered with paper towels to drain.
  3. Meanwhile, place each tortilla on a baking sheet, and toast under the broiler for three minutes, turning once, until tortillas begin to brown and turn crispy.
  4. Carefully remove the tortillas on their baking sheets and rest on a heatproof surface.
  5. Sprinkle each tortilla with half the Swiss cheese. Crumble three bacon strips over each tortilla.
  6. Slide the baking sheet with tortilla back under the broiler for two to three minutes, until cheese is melted and starting to bubble.
  7. Slice on a cutting board and serve pizza-style.
