Bacon and Swiss Tortilla Melt
This combination is a bit unconventional, but it's delicious and ready in minutes.
Serves: Serves 4
Ingredients:
- 6 pieces bacon
- 2 large soft flour tortillas
- 1 (8-oz.) pkg. shredded Swiss cheese
Directions:
- Preheat the broiler.
- Heat a large skillet over medium heat, and cook bacon until crispy, about five minutes, turning once. Remove bacon strips to a paper plate covered with paper towels to drain.
- Meanwhile, place each tortilla on a baking sheet, and toast under the broiler for three minutes, turning once, until tortillas begin to brown and turn crispy.
- Carefully remove the tortillas on their baking sheets and rest on a heatproof surface.
- Sprinkle each tortilla with half the Swiss cheese. Crumble three bacon strips over each tortilla.
- Slide the baking sheet with tortilla back under the broiler for two to three minutes, until cheese is melted and starting to bubble.
- Slice on a cutting board and serve pizza-style.
