Baked Halibut with Blue Cheese
Halibut is a tasty fish that is enhanced by the blue cheese dressing in this recipe.
Serves: Serves: 6
Ingredients:
- 2 1/2 cups nonfat blue cheese salad dressing
- 2 pounds halibut fillets
- 1 large red onion, thinly sliced
- 2 tablespoons crumbled blue cheese
Directions:
- Spray 9 X 13-inch baking dish with cooking spray.
- Pour 1 cup salad dressing on bottom of pan.
- Top with halibut fillets and remaining dressing; place onion slices on top and sprinkle with blue cheese.
- Cover and refrigerate several hours or overnight.
- Bake in preheated 350F oven 15 to 20 minutes, until fish flakes easily with a fork.
- Fish is a good source of cobalamin (vitamin B), a vitamin essential for the production of dopamine (energy) and serotonin (well-being).
