Baked Halibut with Blue Cheese

Halibut is a tasty fish that is enhanced by the blue cheese dressing in this recipe.

  • 2 1/2 cups nonfat blue cheese salad dressing
  • 2 pounds halibut fillets
  • 1 large red onion, thinly sliced
  • 2 tablespoons crumbled blue cheese

  1. Spray 9 X 13-inch baking dish with cooking spray.
  2. Pour 1 cup salad dressing on bottom of pan.
  3. Top with halibut fillets and remaining dressing; place onion slices on top and sprinkle with blue cheese.
  4. Cover and refrigerate several hours or overnight.
  5. Bake in preheated 350F oven 15 to 20 minutes, until fish flakes easily with a fork.
  • Fish is a good source of cobalamin (vitamin B), a vitamin essential for the production of dopamine (energy) and serotonin (well-being).
