Chinese Chicken Bake

Ginger and garlic powder add a whole lot of flavor to this chicken bake, but no fat!

  • 1 1/2 pounds boneless, skinless chicken breasts
  • 3/5 cup low-sodium soy sauce
  • 1 teaspoon dry mustard
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper

  1. Spray shallow baking dish with cooking spray; arrange chicken breasts in single layer in dish.
  2. Combine soy sauce, mustard, ginger, garlic powder and pepper in small bowl; mix until blended.
  3. Pour sauce over chicken; cover and refrigerate overnight.
  4. Preheat oven to 350F. Bake 15 minutes; remove chicken and brush generously with marinade in pan.
  5. Bake an additional 10 to 15 minutes, until chicken is cooked through and lightly browned.
  • No dry mustard in the house? No problem--substitute 1 tablespoon prepared mustard for 1 teaspoon dry mustard.
