Exotic Spice-Grilled Bluefish with Mirin-Mustard Sauce

This sweet and pungent Japanese-style sauce tastes great when paired with bluefish.

Serves: Serves 4

Ingredients:

  • 4 bluefish fillets, about 8oz (225g) each
  • 2 tablespoons Asian sesame oil
  • Kosher salt and freshly cracked black pepper

The spice rub

  • 1 teaspoon ground ginger
  • 1 teaspoon ground white pepper
  • 1 teaspoon ground coriander
  • Pinch of ground cinnamon
  • Pinch of ground cardamom

The sauce

  • 1/4 cup Dijon mustard
  • 1/4 cup mirin (sweet rice wine)
  • 2 tablespoons rice vinegar
  • 2 tablespoons Asian sesame oil
  • 2 tablespoons minced scallions
  • Kosher salt and freshly cracked black pepper to taste

Directions:

  1. Build a fire in your grill. When the coals are all ignited, the fire has died down, and the temperature is medium (see Gauging the temperature), you're ready to cook.
  2. Combine the spice rub ingredients in a small bowl and mix well.
  3. Rub the fish fillets with sesame oil, sprinkle with salt and pepper, then coat them generously with the spice rub, pressing gently to be sure it adheres. Put the fillets on the grill over the coals, skin side up, and cook until just opaque all the way through (6-8 minutes per side). To check for doneness, poke the fish with your finger to test its firmness (see The "hand method"); if you're unsure, cut into one of the fillets at its thickest point to be sure it is just opaque all the way through.
  4. While the fish cooks, make the sauce: Whisk the mustard, mirin, vinegar, sesame oil, and scallions together in a small bowl; season to taste with salt and pepper.
  5. Serve the bluefish drizzled with mustard sauce, and pass any remaining sauce on the side.
