Fried Monkfish

Fried monkfish is a good choice during your pregnancy

  • 1 pound monkfish
  • 1 teaspoon dried basil
  • Brown rice or spelt flour
  • 1 to 2 eggs
  • 2 tablespoons olive oil
  • Salt
  • Pepper

  1. Cut the monkfish into 1-inch cubes.
  2. Add the basil to the flour.
  3. Beat the eggs well and dip the monkfish in, a few pieces at a time.
  4. Heat the olive oil in a heavy skillet.
  5. Roll the pieces of monkfish in the seasoned flour.
  6. Put the floured fish into the skillet, but do not overcrowd the pan. Fry gently, several minutes on each side, until the batter is crisp and the fish is done.
  7. Season with salt and pepper.
