Fried Red Peppers

Here's a succulent vegetable dish that will please everyone -- even people who say they don't like vegetables!

Serves: Serves 4

Ingredients:

  • 13 cup olive oil
  • 2 cups roasted red peppers in large pieces
  • 2 egg whites
  • 13 cup skim milk
  • 1 tsp. salt
  • 1 cup dried bread crumbs

Directions:

  1. Heat oil in a large skillet over medium heat.
  2. Place pepper pieces in a large bowl.
  3. Whisk egg whites and milk in a small bowl.
  4. Pour mixture over pepper pieces, turning to coat.
  5. Mix salt with bread crumbs and pour crumbs onto a plate.
  6. Roll pepper pieces one by one in bread crumbs and place in the skillet. Fry for four minutes, or until bread crumbs begin to crisp, turning once.
