Halibut Italiano

This halibut tastes like it took all day to make. The Italian seasonings make it a snap.

Serves: Serves: 4

Ingredients:

  • 2 teaspoon vegetable broth
  • 4 teaspoon minced garlic
  • 16-ounce can of Italian-style stewed tomatoes
  • 1 1/2 teaspoon Italian seasoning
  • 1/2 pound mushrooms, quartered
  • 1 tablespoon lemon juice
  • 1/2 teaspoon pepper
  • 1-pound halibut fillets

Directions:

  1. Spray small saucepan with cooking spray; add vegetable broth and heat over medium-high heat.
  2. Add garlic and cook 1 to 2 minutes; add tomatoes, Italian seasoning, mushrooms, lemon juice and pepper. Cook, stirring occasionally, 10 to 15 minutes; remove from heat.
  3. While sauce is cooling, spray shallow baking dish with cooking spray; arrange halibut in single layer in dish.
  4. Pour sauce over fish; cover and refrigerate several hours, if desired.
  5. Preheat oven to 400F. Remove cover and bake 12 to 15 minutes, until fish flakes easily with a fork.
Tips:
  • Tomato seeds may contain a powerful clot-fighting compound, helping to reduce the risk of heart disease and stroke.
