Halibut Italiano
This halibut tastes like it took all day to make. The Italian seasonings make it a snap.
Serves: Serves: 4
Ingredients:
- 2 teaspoon vegetable broth
- 4 teaspoon minced garlic
- 16-ounce can of Italian-style stewed tomatoes
- 1 1/2 teaspoon Italian seasoning
- 1/2 pound mushrooms, quartered
- 1 tablespoon lemon juice
- 1/2 teaspoon pepper
- 1-pound halibut fillets
Directions:
- Spray small saucepan with cooking spray; add vegetable broth and heat over medium-high heat.
- Add garlic and cook 1 to 2 minutes; add tomatoes, Italian seasoning, mushrooms, lemon juice and pepper. Cook, stirring occasionally, 10 to 15 minutes; remove from heat.
- While sauce is cooling, spray shallow baking dish with cooking spray; arrange halibut in single layer in dish.
- Pour sauce over fish; cover and refrigerate several hours, if desired.
- Preheat oven to 400F. Remove cover and bake 12 to 15 minutes, until fish flakes easily with a fork.
Tips:
- Tomato seeds may contain a powerful clot-fighting compound, helping to reduce the risk of heart disease and stroke.
