Ham and Swiss Casserole

What goes together better than ham and Swiss? This quick casserole is easy, hearty, and full of flavor.

Serves: Serves 4


  • 2 TB. oil
  • 1 large onion, chopped
  • 1 chicken breast, approximately 6 oz., cubed
  • 10 oz. broccoli florets, fresh or frozen (if fresh, about 12 head)
  • 4 slices bread (I like rye.)
  • 6 oz. cubed ham steak (12-inch cubes)
  • 1 (10.5-oz.) can cream of mushroom soup
  • 1 (8-oz.) pkg. shredded Swiss cheese
  • 12 tsp. paprika

  1. Heat oil in a small skillet over medium heat, and cook onion and chicken together until chicken is done, about six minutes.
  2. Meanwhile, if broccoli is frozen, rinse to thaw.
  3. Line an 8 × 8 × 2 microwave-safe dish with bread.
  4. Top with chicken-and-onion mixture, ham, and broccoli.
  5. Pour soup over all, top with shredded Swiss, and sprinkle on paprika.
  6. Cook on medium in microwave for approximately 12 minutes, turning a quarter turn every 3 minutes (cooking time will vary depending on the microwave).
