Lazy Man's Lemon Sole

It's best to keep sole simple -- just enhance the flavor with some lemon juice and Parmesan cheese.

  • 1-pound sole fillet
  • 1/2 cup fresh lemon juice
  • 2 tablespoons grated nonfat Parmesan cheese
  • 3/4 teaspoon lemon pepper
  • Lemon slices, for garnish (optional)

  1. Spray shallow baking dish with cooking spray.
  2. Place sole in baking dish; pour lemon juice over top, cover with plastic wrap and refrigerate at least 1 hour.
  3. Line broiler pan or baking sheet with foil and spray with cooking spray.
  4. Remove fish from baking dish and place on baking sheet; sprinkle with Parmesan cheese and lemon pepper.
  5. Broil 4 to 5 minutes, until fish flakes easily with a fork. Garnish with lemon slices, if desired.
  • Lemons do far more than pucker your lips. They are loaded with disease-fighting flavonoids, potassium, folic acid and vitamin C.
