Quick Quesadillas

These quesadillas are a great after-school snack for hungry kids!

8 servings

Ingredients:

  • 8 8-inch tortillas
  • 1/2 cup refried beans
  • 3/4 cup shredded cheese (any variety)
  • Salsa, optional

Directions:

  1. Place 1 tablespoon of beans on each tortilla. Top with shredded cheese. Fold tortilla in half.
  2. Microwave on high for 15-20 seconds until cheese is melted. Serve with salsa, if desired.
