Quick Stir-Fry Medley

You can adapt this quick and delicious stir-fry meal to include or omit meat.

Serves: Serves: 4

Ingredients:

  • 3 TB. canola oil
  • 1 small onion, diced
  • 1 lb. pork, cut into bite-size pieces (boneless pork chops work well)
  • 2 cups broccoli, broken into bite-size pieces
  • 1 red sweet pepper, cut into bite-size pieces
  • 3 to 4 TB. soy sauce

Directions:

  1. Heat a wok or skillet with oil over medium heat.
  2. Add onion.
  3. Cook, stirring, for four minutes.
  4. Add pork pieces.
  5. Cook, stirring, for five minutes or until pork pieces are cooked through.
  6. Add broccoli, red pepper, and soy sauce.
  7. Cook for another five minutes, and serve over white rice.
  8. For added flavor, add hot oil with soy sauce.
Tips:
  • Note: The broccoli pieces will have a little crunch. If you like your broccoli soft, cook a minute or two longer.
