Southwest-Style Meat Loaf
Meatloaf is a classic heartland food. This southwestern version kicks it up a notch!
Serves: Serves: 6
Ingredients:
- 1 1/2 pounds ground beef
- 3/4 cup (2 1/2 ounce) low-fat tortilla chips, crushed
- 1/4 cup egg substitute
- 15 1/4-ounce can (1 3/4 cups) corn kernels
- 1 1/4 cups chunky, Southwest-style salsa
- 1/4 teaspoon pepper
Directions:
- Preheat oven to 375F.
- Line baking sheet or small baking pan with foil and spray with cooking spray.
- Combine ground beef, crushed tortilla chips, egg substitute, corn kernels, 1 cup salsa and pepper in medium bowl and mix just until ingredients are combined.
- Shape meat mixture into loaf and place on foil. Spread remaining salsa on top.
- Bake 1 hour, until completely cooked through. Serve immediately; refrigerate, reheat and serve later; or freeze, thaw and reheat.
Tips:
- Make the trade! Switching to low-fat tortilla chips saves at least 50 calories and 6 or more grams of fat per ounce!
