Southwest-Style Meat Loaf

Meatloaf is a classic heartland food. This southwestern version kicks it up a notch!

Serves: Serves: 6


  • 1 1/2 pounds ground beef
  • 3/4 cup (2 1/2 ounce) low-fat tortilla chips, crushed
  • 1/4 cup egg substitute
  • 15 1/4-ounce can (1 3/4 cups) corn kernels
  • 1 1/4 cups chunky, Southwest-style salsa
  • 1/4 teaspoon pepper

  1. Preheat oven to 375F.
  2. Line baking sheet or small baking pan with foil and spray with cooking spray.
  3. Combine ground beef, crushed tortilla chips, egg substitute, corn kernels, 1 cup salsa and pepper in medium bowl and mix just until ingredients are combined.
  4. Shape meat mixture into loaf and place on foil. Spread remaining salsa on top.
  5. Bake 1 hour, until completely cooked through. Serve immediately; refrigerate, reheat and serve later; or freeze, thaw and reheat.
  • Make the trade! Switching to low-fat tortilla chips saves at least 50 calories and 6 or more grams of fat per ounce!
