Spicy Overnight Chicken
You have to prepare this spicy chicken the night before, but it's worth it!
Serves: Serves: 4
Ingredients:
- 1-pound boneless, skinless chicken breasts
- 6 to 8 tablespoons apple juice, divided
- 2 tablespoons mustard seed
- 1 1/2 teaspoons ground turmeric
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- 1/2 teaspoon crushed red pepper
- 2 tablespoons paprika
- 1/2 teaspoon pepper
- 1/2 cup orange juice
- 1/4 cup nonfat chicken broth
Directions:
- Spray shallow baking dish with cooking spray.
- Arrange chicken breasts in baking dish and brush with 2 to 4 tablespoons apple juice to moisten.
- Combine remaining ingredients in food processor or blender and process until completely blended. Pour over chicken. Cover and refrigerate for 24 hours.
- Bring chicken to room temperature.
- Preheat oven to 325F. Bake chicken 20 to 25 minutes, until tender. Remove from oven and pour marinade into separate bowl.
- Preheat broiler on high heat. Broil chicken 5 to 6 minutes per side, basting several times with marinade.
Tips:
- Chicken is rich in niacin, the B vitamin that helps all cells obtain the energy they need to stay healthy. One 3-ounce serving of chicken provides half the daily need for niacin.
