St. Paddy's Day Any Day Special
This "unstuffed cabbage" recipe is low on effort, but high on taste!
Serves: Serves: 6
Ingredients:
- 4 cups shredded cabbage
- 2 cups uncooked rice
- 1 1/2 cups chopped onions
- 1 pound lean ground beef
- 1 teaspoon Mrs. Dash seasoning
- 3/4 teaspoon pepper
- 3 tablespoon brown sugar
- 32-ounce can (4 cups) low-sodium tomato juice
- 2 cups water
Directions:
- Spray 9 X 13-inch baking dish with cooking spray.
- Layer cabbage, rice, onions and beef; repeat layers starting with cabbage. Sprinkle Mrs. Dash seasoning, pepper and brown sugar over layers in baking dish.
- Combine tomato juice and water and mix until blended; pour over top of casserole.
- Cover with freezer-safe wrap and freeze until ready to serve.
- To serve: Preheat oven to 325F. Bake frozen casserole 2 hours, until completely heated through.
- Uncut cabbage will keep for several months if refrigerated, but for a timesaver, purchase packaged shredded cabbage in the produce section of your local supermarket.
