Steamed Green Beans
Green beans are best served fresh, not frozen, and lightly steamed with butter and a little salt. They're also a good pick-up food for little fingers.
Serves: Makes about 2 cups
Ingredients:
- 1/2 pound green beans, preferably fresh
- 1 wedge lemon
- 1 tablespoon butter
- Salt to taste
Directions:
- Trim the woody ends of the green beans with a sharp knife or shears.
- Put a steamer basket in a large saucepan with 1" water. Bring to a boil over medium-high heat. Reduce the heat to medium. Add the green beans, then squeeze the lemon wedge over the beans (this will enliven their flavor and help retain their color). Cover and steam for 10 minutes or until the beans are tender.
- Remove the beans to a serving bowl. Add the butter and sprinkle with salt. Toss to coat.
