Turkey Cutlets
These mildly flavored turkey cutlets are balanced right for your pregnancy.
Serves: Serves: 2
Ingredients:
- 2 tablespoons canola or olive oil
- 1 package turkey cutlets, about 1 pound
- 1/4 cup spelt breadcrumbs
- Squeeze of lemon
- Salt to taste
Directions:
- In a large skillet, heat oil until very hot, but not smoking.
- Roll each cutlet in breadcrumbs and slip into pan, being careful not to overcrowd. Make two batches if necessary.
- Cook each side for 4 to 5 minutes or until nicely browned. Turn once only.
- Serve with a squeeze of lemon and add salt to taste.
