Turkey Cutlets

These mildly flavored turkey cutlets are balanced right for your pregnancy.

Serves: Serves: 2

Ingredients:

  • 2 tablespoons canola or olive oil
  • 1 package turkey cutlets, about 1 pound
  • 1/4 cup spelt breadcrumbs
  • Squeeze of lemon
  • Salt to taste

Directions:

  1. In a large skillet, heat oil until very hot, but not smoking.
  2. Roll each cutlet in breadcrumbs and slip into pan, being careful not to overcrowd. Make two batches if necessary.
  3. Cook each side for 4 to 5 minutes or until nicely browned. Turn once only.
  4. Serve with a squeeze of lemon and add salt to taste.
