Antipasto Pasta Salad

This pasta salad has lots of good Italian flavor, witih ingredients like artichoke hearts, roasted red peppers, leeks, and black olives.

Serves: 10 cups

Ingredients:

  • 8 ounces penne pasta (about 2 2/3 cups) or rotini pasta (about 3 cups)
  • 1 cup sliced fresh mushrooms
  • 4 ounces ham, at least 97% lean, thinly sliced and cut into thin strips
  • 1 cup diced nonfat or reduced-fat mozzarella cheese
  • 1 cup chopped frozen (thawed) or canned (drained) artichoke hearts
  • 1/2 cup thin strips commercial roasted red pepper (half of a 7-ounce jar)
  • 1/2 cup thinly sliced scallions or leeks
  • 1/2 cup sliced black olives
  • 1/2 cup bottled nonfat or reduced-fat red wine vinaigrette salad dressing
  • 1/2 teaspoon dried oregano

Directions:

  1. Cook the pasta al dente according to package directions. About 2 minutes before the pasta is done, add the mushrooms, and cook until the pasta is al dente and the mushrooms are lightly cooked. Drain, rinse with cold water, and drain again.
  2. Place the pasta mixture in a large bowl. Add the ham, cheese, artichoke hearts, roasted pepper, scallions or leeks, and olives, and toss to mix. Add the dressing and oregano, and toss to mix well.
  3. Cover the salad, and chill for at least 2 hours before serving. Toss in a little more salad dressing just before serving if the salad seems too dry.
