Chinese Cucumber Salad

This cucumber salad is a great appetizer or quick side dish, with a wonderful Chinese dressing.

Serves: 8 servings

Ingredients:

  • 3 cups peeled, sliced cucumber (about 3 medium)
  • 1 medium onion, thinly sliced
  • DRESSING
  • 1/4 cup seasoned rice wine vinegar
  • 1 tablespoon reduced-sodium soy sauce
  • 1 teaspoon sesame oil
  • 1/8 teaspoon ground white pepper

Directions:

  1. Place the cucumber and onion in a shallow dish, and toss to mix.
  2. Place the dressing ingredients in a small bowl, and stir to mix. Pour the dressing over the vegetables, and toss to mix well.
  3. Cover the salad, and chill for several hours or overnight before serving.
