Chinese Cucumber Salad
This cucumber salad is a great appetizer or quick side dish, with a wonderful Chinese dressing.
Serves: 8 servings
Ingredients:
- 3 cups peeled, sliced cucumber (about 3 medium)
- 1 medium onion, thinly sliced
- DRESSING
- 1/4 cup seasoned rice wine vinegar
- 1 tablespoon reduced-sodium soy sauce
- 1 teaspoon sesame oil
- 1/8 teaspoon ground white pepper
Directions:
- Place the cucumber and onion in a shallow dish, and toss to mix.
- Place the dressing ingredients in a small bowl, and stir to mix. Pour the dressing over the vegetables, and toss to mix well.
- Cover the salad, and chill for several hours or overnight before serving.
