Smoked Mackerel Salad
Smoked mackerel and this simple dressing make a quick and easy salad.
Serves: Yields approximately 2 cups.
Ingredients:
- 4 smoked mackerel fillets, skinned and boned
- 1/2 red onion, diced small
- 1/3 to 1/2 cup Egg-Free Mayonnaise
- Juice of 1 lemon
Directions:
- Chop fillets by hand, add onion, mayonnaise, and lemon juice.
- Mix well and serve with crackers.
