Quick and Easy Gravy
Gravy is quick and easy to make and goes great with any meat dish.

Serves: Serves 4
- 2 cups (500ml) chicken, beef, or vegetable stock
- 1 tbsp all-purpose flour
- sea salt and freshly ground black pepper
- Start with a flameproof roasting pan from which you've just removed the roasted meat. On a work surface, tilt the pan so the fat settles on top of the meat juices. Spoon out and discard almost all the fat, then add the stock and place the pan over high heat. Bring to a boil, using a wooden spoon to stir and scrape up the browned bits stuck to the bottom of the pan, then reduce the heat to a simmer.
- Mix together the flour and a small amount of water to make a smooth paste, then stir it into the pan, using a whisk to avoid any lumps. Cook gently, stirring constantly, for 5 minutes, then taste and season with salt and pepper, if needed. Strain through a fine sieve and serve in a gravy boat.
