Asparagus Almondine

This recipe lets the asparagus shine, and the slivered almonds make for a lovely contrast in taste and texture.

Serves: Serves: 4 (1/2 cup)

Ingredients:

  • 1 tablespoon + 1 teaspoon reduced-calorie margarine
  • 1/4 cup (1 ounce) slivered almonds
  • 3 cups frozen cut asparagus, thawed
  • 2 teaspoons lemon juice

Directions:

  1. In a large skillet, melt margarine.
  2. Stir in almonds. Sauté almonds for 5 to 6 minutes or until golden.
  3. Add asparagus and lemon juice. Mix well to combine.
  4. Continue cooking for 6 minutes or until asparagus is heated through, stirring occasionally.
Tips:
  • Thaw asparagus by placing in a colander and rinsing under hot water for one minute.
