Asparagus Almondine
This recipe lets the asparagus shine, and the slivered almonds make for a lovely contrast in taste and texture.
Serves: Serves: 4 (1/2 cup)
Ingredients:
- 1 tablespoon + 1 teaspoon reduced-calorie margarine
- 1/4 cup (1 ounce) slivered almonds
- 3 cups frozen cut asparagus, thawed
- 2 teaspoons lemon juice
Directions:
- In a large skillet, melt margarine.
- Stir in almonds. Sauté almonds for 5 to 6 minutes or until golden.
- Add asparagus and lemon juice. Mix well to combine.
- Continue cooking for 6 minutes or until asparagus is heated through, stirring occasionally.
- Thaw asparagus by placing in a colander and rinsing under hot water for one minute.
