Everyone's Favorite Macaroni Salad
There are many different recipes for this delectable classic, but this macaroni salad wins rave reviews.
Serves: Serves: 4 (1/2 cup)
Ingredients:
- 3/4 cup Kraft fat-free mayonnaise
- 1 teaspoon lemon juice
- Sugar substitute to equal 1 teaspoon sugar
- 1 tablespoon finely chopped onion
- 1 tablespoon finely chopped fresh parsley or 1 teaspoon dried parsley flakes
- 1/2 cups cold cooked elbow macaroni, rinsed and drained
- 1 cup finely chopped celery
Directions:
- In a large bowl, combine mayonnaise, lemon juice, and sugar substitute.
- Stir in onion and parsley. Add macaroni and celery. Mix well to combine.
- Cover and refrigerate for at least 30 minutes. Gently stir again just before serving.
- 1 1/3 cups uncooked elbow macaroni usually cooks to about 1 1/2 cups.
