Everyone's Favorite Macaroni Salad

There are many different recipes for this delectable classic, but this macaroni salad wins rave reviews.

Serves: Serves: 4 (1/2 cup)

Ingredients:

  • 3/4 cup Kraft fat-free mayonnaise
  • 1 teaspoon lemon juice
  • Sugar substitute to equal 1 teaspoon sugar
  • 1 tablespoon finely chopped onion
  • 1 tablespoon finely chopped fresh parsley or 1 teaspoon dried parsley flakes
  • 1/2 cups cold cooked elbow macaroni, rinsed and drained
  • 1 cup finely chopped celery

Directions:

  1. In a large bowl, combine mayonnaise, lemon juice, and sugar substitute.
  2. Stir in onion and parsley. Add macaroni and celery. Mix well to combine.
  3. Cover and refrigerate for at least 30 minutes. Gently stir again just before serving.
Tips:
  • 1 1/3 cups uncooked elbow macaroni usually cooks to about 1 1/2 cups.
