Frijoles San Juan
This super-quick bean dish provides real flavor fireworks in a side dish serving.
Serves: Serves: 4 (1/4 cup)
Ingredients:
- 10 ounces (one 16-ounce can) pinto beans, rinsed and drained
- 1/2 cup chunky salsa (mild, medium, or hot)
- 1/2 teaspoon dried minced garlic
- 1/2 cup +1 tablespoon (2 1/4 ounces) shredded Kraft reduced-fat Cheddar cheese
Directions:
- In a large bowl, slightly mash pinto beans with a potato masher or fork. Stir in salsa and garlic.
- Pour mixture into a large skillet sprayed with butter-flavored cooking spray.
- Cook over medium heat for 10 minutes. Add Cheddar cheese. Mix well to combine.
- Lower heat and simmer for 5 minutes, stirring occasionally.
