Grilled Shiitake Mushrooms with Scallions and Ginger
Shiitake mushrooms tossed with a simple Asian-style dressing make the perfect side dish.
Serves: Serves 4 to 6 as a side dish
Ingredients:
- 2lb (900g) large fresh shiitake mushrooms, tough bottom part of stems trimmed off
- Kosher salt and freshly cracked black pepper
- 1 tablespoon Asian sesame oil
- 1 tablespoon vegetable oil
The dressing
- 3 tablespoons soy sauce
- 2 tablespoons dry sherry
- 1 tablespoon Asian sesame oil
- 1 tablespoon peeled and minced fresh ginger
The garnish
- 2 tablespoons thinly sliced scallions, white and light green parts
Directions:
- Build a fire in your grill. When the coals are all ignited, the flames have died down, and the temperature is medium-hot (see Gauging the temperature), you're ready to cook.
- Combine the dressing ingredients in a small bowl, mix well, and set aside.
- Place the mushrooms in a large bowl, sprinkle generously with salt and pepper, and drizzle with the sesame and vegetable oils, tossing to coat. Put them on the grill directly over the coals and cook until they are browned and crisp and have grill marks on them (3-4 minutes per side). If you want to check for doneness, cut into one of the mushrooms to be sure it is moist all the way through, rather than dry at the center.
- When the mushrooms are done, return them to the bowl you originally tossed them in, add the dressing, and toss gently to coat. Transfer the mushrooms to a serving dish, garnish with the scallions, and serve.
