Iowa Corn Relish
In Iowa, corn is served with just about every truck stop meal. This corn relish is one popular way to serve it.
Serves: Serves: 6 (1/2 cup)
Ingredients:
- 2 cups (one 10-ounce can) whole-kernel corn, rinsed and drained
- 1 cup finely chopped celery
- 1/4 cup finely chopped green bell pepper
- 1/4 cup finely chopped onion
- 1/3 cup sweet pickle relish
- 1/4 cup (one 2-ouncejar) chopped pimiento, drained
- 1/2 cup Kraft Fat Free French Dressing
- 1/8 teaspoon black pepper
Directions:
- In a large bowl, combine corn, celery, green pepper, and onion.
- Stir in pickle relish and pimiento.
- Add French dressing and black pepper. Mix well to combine.
- Cover and refrigerate for at least 2 hours.
- Gently stir again just before serving.
