Sesame-Water Chestnut Relish

This fragrant, crunchy relish is lovely served alongside grilled fish or chicken.

Serves: Makes about 1 cup


  • 2 tablespoons sesame seeds
  • 1/2 cup canned water chestnuts, diced medium
  • 3 tablespoons roughly chopped scallions, with green tops
  • 2 tablespoons Asian sesame oil
  • 1 tablespoon peeled and minced fresh ginger

  1. Toast the sesame seeds on the stove top in a dry skillet over medium heat, shaking them frequently to avoid burning, until they are fragrant and just a shade darker. Combine all the ingredients in a medium bowl and mix well. This will keep, covered and refrigerated, for 2 days.
