Vegetable Fritters

As a side dish, fried vegetable fritters are nutritious and filling.

Ingredients:

  • 3 cups grated vegetables (choose vegetables such as peppers, mushrooms, cauliflower, broccoli, eggplant, and zucchini)
  • 1 tablespoon finely minced onion
  • 2 eggs
  • Olive oil
  • Salt to taste

Directions:

  1. Mix the grated vegetables, used either alone or in combination, with the onion and eggs. In a large, heavy skillet, heat the olive oil.
  2. Lightly shape a handful of the batter for each fritter and gently drop into the oil, being careful not to splatter yourself. Flatten with a spatula.
  3. Let them fry over medium heat until the bottoms begin to color. Carefully turn over and fry several more minutes.
  4. Drain on paper towels, sprinkle with salt, and serve.
