Vegetable Fritters
As a side dish, fried vegetable fritters are nutritious and filling.
Ingredients:
- 3 cups grated vegetables (choose vegetables such as peppers, mushrooms, cauliflower, broccoli, eggplant, and zucchini)
- 1 tablespoon finely minced onion
- 2 eggs
- Olive oil
- Salt to taste
Directions:
- Mix the grated vegetables, used either alone or in combination, with the onion and eggs. In a large, heavy skillet, heat the olive oil.
- Lightly shape a handful of the batter for each fritter and gently drop into the oil, being careful not to splatter yourself. Flatten with a spatula.
- Let them fry over medium heat until the bottoms begin to color. Carefully turn over and fry several more minutes.
- Drain on paper towels, sprinkle with salt, and serve.
