Chili with Winter Squash and Beans
Chili made with turkey has a milder flavor, and a much healthier outlook.
Serves: Serves: 6
Ingredients:
- 3/4 pound extra-lean ground turkey
- 1 cup diced onion
- 3/4 teaspoon garlic powder
- 3/4 teaspoon Mrs. Dash seasoning
- 2 (28-ounce) cans diced tomatoes with green chilies
- 1 (1/4-ounce) package chili seasoning mix
- 2 (14 1/2-ounce) cans nonfat beef broth
- 15-ounce can black beans, drained
- 2 medium zucchinis, diced
- 2 medium yellow squash, diced
- 2 cups diced green bell peppers
- 1 cup diced celery
- 3/4 cup diced carrot
Directions:
- Spray Dutch oven with cooking spray and heat over medium-high heat.
- Add ground turkey and onion; sprinkle with garlic powder and Mrs. Dash seasoning.
- Cook, stirring frequently, 5 to 8 minutes, until turkey and onion are browned.
- Add remaining ingredients; bring to a boil over high heat.
- Reduce heat to low and simmer 25 to 30 minutes, until vegetables are tender.
- Chili can be served immediately, refrigerated 3 to 4 days or frozen and reheated in the microwave.
Tips:
- Just 3/4 cup of black beans provides 25 percent of a woman's RDA for magnesium, an essential mineral that functions in more than 300 enzymes.
