Chili with Winter Squash and Beans

Chili made with turkey has a milder flavor, and a much healthier outlook.

Serves: 6

Ingredients:

  • 3/4 pound extra-lean ground turkey
  • 1 cup diced onion
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon Mrs. Dash seasoning
  • 2 (28-ounce) cans diced tomatoes with green chilies
  • 1 (1/4-ounce) package chili seasoning mix
  • 2 (14 1/2-ounce) cans nonfat beef broth
  • 15-ounce can black beans, drained
  • 2 medium zucchinis, diced
  • 2 medium yellow squash, diced
  • 2 cups diced green bell peppers
  • 1 cup diced celery
  • 3/4 cup diced carrot

Directions:

  1. Spray Dutch oven with cooking spray and heat over medium-high heat.
  2. Add ground turkey and onion; sprinkle with garlic powder and Mrs. Dash seasoning.
  3. Cook, stirring frequently, 5 to 8 minutes, until turkey and onion are browned.
  4. Add remaining ingredients; bring to a boil over high heat.
  5. Reduce heat to low and simmer 25 to 30 minutes, until vegetables are tender.
  6. Chili can be served immediately, refrigerated 3 to 4 days or frozen and reheated in the microwave.

Tips: Just 3/4 cup of black beans provides 25 percent of a woman's RDA for magnesium, an essential mineral that functions in more than 300 enzymes.
