Simple Fish Soup
Simple strong flavors, like a monkfish broth, are frequently the best.
Serves: Serves: 2.
Ingredients:
- 1 tablespoon olive oil
- 1 carrot, diced small
- 2 small ribs of celery, diced small
- 1/2 onion, diced small
- 4 cups water
- 3/4 pound sole or monkfish, cut into 1-inch pieces
- Salt and pepper to taste
Directions:
- Heat the olive oil and sauté the carrot, celery, and onion for several minutes.
- Add water and cook until the vegetables are soft, about 10 minutes.
- Add the sole or monkfish and cook a few minutes longer, until the fish is thoroughly done. Season with salt and pepper.
