Simple Fish Soup

Simple strong flavors, like a monkfish broth, are frequently the best.

Serves: Serves: 2.

Ingredients:

  • 1 tablespoon olive oil
  • 1 carrot, diced small
  • 2 small ribs of celery, diced small
  • 1/2 onion, diced small
  • 4 cups water
  • 3/4 pound sole or monkfish, cut into 1-inch pieces
  • Salt and pepper to taste

Directions:

  1. Heat the olive oil and sauté the carrot, celery, and onion for several minutes.
  2. Add water and cook until the vegetables are soft, about 10 minutes.
  3. Add the sole or monkfish and cook a few minutes longer, until the fish is thoroughly done. Season with salt and pepper.
